The City amped up preparations yesterday in anticipation of a blizzard, shutting down the subways at 11pm and instituting a travel ban. Schools closed. We woke up this morning to about 6" of snow, well below the estimates of 1-2 feet. I'm using comp time to stay home today because the subways won't be back to regular service until noon.
I thought now would be a good time to share a couple of recipes for tomato soup, a dish I grew up not understanding but then learned to love in college. (Magnolia's creamy tomato artichoke soup is still a must-have each time we drive up to Rochester to help Annie move in/out).
Starting with a hearty and hearth-warming stew for the cold seasons, a winter tomato soup with bulgur.
Into the warm seasons (thanks David Chang!), a cold version with feta, olives, and cucumbers.
And while we're at it, here's a whole list of interesting cold soups.
Now to get Kev to come around on tomato soup too...
