Gather Journal's Leek & Potato Galette

Kev bought me this issue of the semi-annual Gather Journal for Christmas in 2013. This is only the second recipe that I've used from it, the first being a kimchee recipe that included apples. The finished product was delicious, the crust savory and the potatoes and leeks so roasted they were creamy. The comte layered on top formed a nice crust too. Unfortunately, it was a dinner item and so the lighting wasn't ideal for picture-taking. Let's just say mine came out picture perfect too, if rounder, than the one depicted in Gather.



The recipe called for creme fraiche, which is surprisingly easy to make: 1 cup heavy cream, 1 tbsp buttermilk, and then 8-24 hours of sitting at cool room temp covered by a cheese cloth. Ours sat on this ledge for 16 hours, came out wonderfully, and will last 7-10 days in the fridge. Very cool.
